Spontaneous Miscellaneous

Happy Friday everyone! That means it is time for a spontaneous miscellaneous post. Let's talk about some of my recent favorite things :)

My sister chopped her hair off and it is SO cute! To be honest though it does freak me out a tad because now we look so similar! So short and sassy!

ZOODLES ARE THE BEST! I wrote all about my obsession with zucchini noodles in this recipe post here. They are such a healthy alternative to regular spaghetti and actually taste really good!

Hidden Figures is an AMAZING movie. My sister and I went with some friend to see it opening day, and WOW it was brilliant. You know movies are good when they make you think about the story line and plot even after it is over. Watch the trailer here, and then GO SEE IT IN THEATERS!

I updated my iphone to an iphone 7 a few months ago and I completely forgot there is no headphone jack so I had to find bluetooth earbuds for running. These are absolutely fantastic for not too much money. No chord, no problem! Find them here.

Well y'all, it got COLD this past weekend! This past Sunday the high was 50 degrees (which is basically 50 below for us Floridans) and I was LOVING it. I piled on as many layers as I could and was so pumped to actually get to wear my winter clothes for a couple days. It is still a little chilly today but is slowly heating up. 

What is the weather like where you live? I know in so many states, it is snowing like crazy. Good luck to y'all :)

Pesto Chicken Zucchini Noodles (Quick & Easy!)


Hey y'all! Happy Monday! Today I started back school and I know many of you did as well as starting back work. Because so many of you are single or young girls in college, I thought sharing a super easy and nutritious dinner option would be helpful. Making zucchini noodles is a fantastic option because you get to fulfill the craving of pasta while actually eating your vegetables. The zoodles take on the taste of what ever sauce you place on top. This is super easy to make and change for however many mouths you're feeding. Each zucchini that you turn into noodles is usually one large portion. The magic behind the madness is this vegetable spiralizer. It is super easy and doesn't take much time. I think it is a great use of 10$! 

Ingredients (serves 4):
A small jar of your favorite pesto sauce
1 Pulled rotisserie chicken
4 zucchini

Directions:
Put your zucchini through the spiralizer as stated in the directions of your specific spiralizer. Keep in a bowl. In a separate bowl, mix together the small jar of pesto with your pulled rotisserie chicken. In a pan drizzled with olive oil, cook your zoodles on medium to high heat for several minutes. Add the pesto chicken to the pan and continue to stir around for an addition couple of minutes, until heated fully. Serve and enjoy!

This is so simple to make ahead of time and reheat or to eat on the spot. I recommend doubling it, you will want left overs! I will talk to you very soon!
