Happy Monday everyone! I can't believe that the 4th of July has already passed. It is seriously one of my favorite holidays and I am always so sad when it's over.
For the 4th this past year, we had quite a festive couple days, and ended the 4th with a watermelon themed grill out with a dessert by yours truly. I love finding cute new themes for simple parties with family and loved this summer theme.
I couldn't resist making some themed rice krispies, because y'all know there isn't a dessert I love more! I love making different rice krispies for different holidays (Halloween, Easter, Potlucks, etc..).
Approx. 14 treats
Ingredients:
Pam spray
Watermelon Rind:
8 cups mini marshmallows
6 Tbsp butter
8 cups Rice Krispies (I used a gluten free version, hence why it looks slightly different)
green gel food coloring
Watermelon Center:
10 cups mini marshmallows
6 Tbsp butter
10 cups Rice Krispies
red gel food coloring
a few chocolate chips
Pam spray
Watermelon Rind:
8 cups mini marshmallows
6 Tbsp butter
8 cups Rice Krispies (I used a gluten free version, hence why it looks slightly different)

Watermelon Center:
10 cups mini marshmallows
6 Tbsp butter
10 cups Rice Krispies
red gel food coloring
a few chocolate chips
Directions:
Start with the 'rind' ingredients. Melt the butter and marshmallows in a microwave safe dish, stirring every 30 seconds. Stir in several drops of green food coloring, then mix in Rice Krispies. Spray your round cake pan with non-stick spray and place green mixture around edge of pan.
Next, repeat these steps with the 'center' ingredients. Once you have placed the red mixture into the center of the pan, place a few chocolate chips (pointy side down) to act as "seeds".
Let the pans cool and then slice and enjoy!
