Easy Refreshing Summer Rice Bowl/ Salad

Hey y'all! Happy hump day. It is no secret that baking is my forte and cooking rather frightens me but every now and then I stumble upon a super easy and delicious meal that I can't help but share. This recipe is so refreshing and light, however if you want to make it a tad more filling, I think it would taste great with chicken in it as well. Enjoy!

Serves: 4
Ingredients:
1 cup cooked rice
4 ears of fresh corn, husked
2 cups of cherry or grape or canned tomatoes
1 cup fresh arugula or spinach
1 fresh jalapeno, thinly sliced
1 cup red onion, cut into thin wedges

Dressing Ingredients:
 4 tbsp red wine vinegar
3 tbsp olive oil
salt and pepper to taste


Directions:
Prepare rice and set in refrigerator to cool completely.
Then grill the corn or cook in boiling water while rice is being cooked. Then shave the corn off the cob and set aside to cool as well.
Once both of these are cooled, combine them together with halved tomatoes, onion, jalapeno and spinach in a serving bowl.
Combine dressing ingredients in a separate bowl and then pour over salad.
Refrigerate before serving.
