Hi everyone! I hope your quarantine is treating you well. I am trying to see the positive amid this situation and try to find little things I enjoy to do but never before found time for. I don't know about y'all, but I love to bake and find it so therapeutic.
My family has been so obsessed with these cookies. We make them in our house about once a week it feels like. Beware though, these cookies are addictive.
Ingredients:
1 1/4 Cup Almond Flour
3/4 Teaspoon Baking Powder
1/4 Teaspoon Baking Soda
1/2 Teaspoon Salt
4 Tablespoons Unsalted Butter (softened)
1/3 Cup Almond Butter or Peanut Butter (I love using peanut butter but if you don't want a strong peanut butter taste, use almond butter instead.)
3/4 Cup + 2 Tablespoons Dark Brown Sugar
1 Egg
1 Teaspoon Vanilla Extract
1 Cup Chocolate Chips
Directions:
Preheat your oven to 350 and line a baking sheet with parchment paper.
In a small bowl, whisk together the first 4 ingredients and set aside.
In another bowl, add butter and almond butter and beaut until creamy. Then add the sugar and beat for a minute or so.
Add the egg and vanilla and beat just enough to combine.
Add the dry ingredients and stir to combine. Then fold in the chocolate chips.
Use a cookie scoop and portion them out on the pan.
Bake for 10-13 minutes. Let them sit on the cookie sheet for 1-2 minutes once they are done.
