Happy Tuesday friends. I hope you enjoyed your 4th of July! I spent the day sleeping in, and then spent most of my time by the pool with family before heading to work for the night with a patriotic bow in my hair! ;) What did y'all do??
Let me introduce you to this beauty right here... a NO FLOUR... GLUTEN FREE... CHEESECAKE BITE... whaaaaaaat?? Yeah and it tastes pretty much like exact cheesecake... seriously.
These are super quick and taste AMAZING the next day after sitting in the refrigerator all night.
Here we go my gluten free friends... I may have just hooked you on this little guy right here.

Gluten Free Cheesecake Bites
Yield: 12-15 Prep
Time: 5 mins Cook Time: 40 mins Total Time: 45 mins
Ingredients:
3 packages cream cheese,
softened
1 ½ cup sugar
1 ½ tsp vanilla extract
5 eggs
1 cup sour cream
1-1 ½ cups cherry pie
filling
Directions:
Preheat oven to 300
degrees F. In a large mixing bowl, beat cream cheese, 1 cup sugar, and 1
teaspoon vanilla until smooth.
Add eggs, one at a time, mixing
after each one. Spoon into muffin cups.
Bake for 25 minutes and
let cool for 5 minutes.
In a small mixing bowl,
combine sour cream, and the remaining sugar and vanilla until smooth. Spoon
mixture on top of cheesecakes.
Bake for an additional 8
minutes and let cool. Top with pie filling.
Store in refrigerator for
at least an hour before serving. (It tastes even better after several hours
though).
