Gluten Free No-Bake Reese's Peanut Butter Cup Cheescake- Sweet Saturday!



 
Hello everyone and happy Sweet Saturday! Next Saturday is Pi day so I have prepared a delicious pie in preparation. I thought I should have something good come out of Pi since it is a number many of us are working with in science and math (3.14.....) which drives us all crazy in equations etc.... Since March 14th is next week though many people always want some pie. This no bake pie is super easy and super yummy. When I say yummy, I mean my family applauded me for it. When I say yummy, I mean they were all willing to fight for the last piece. It is that good. If you are like me and like anything with peanut butter than you will adore this. I made it gluten free by using gluten free oreos for the crust but feel free to use regular if you would like. This is a super rich creamy dessert that would be great for a potluck or party. I even think it tastes better then birthday cake for someone's birthday possibly! I hope you enjoy!

Sweet Saturday
 
Ingredients:
Crust
2 C Oreo Cookie Crumbs
1/4 C Unsalted butter, melted
 
Filling
1 pk (8oz) Cream Cheese
3/4 C Creamy Peanut Butter
1 tsp Pure Vanilla Extract
2 tbs Heavy Whipping Cream
1pk (8oz) Cool Whip (thawed)
10 Reese's Peanut Butter Cups (chopped)
 
Garnish
This can be altered to how you choose. I just placed more Reese's around the perimeter of the pie but you can do other options as well.
Peanut Butter Cups
1/4 CMelted Creamy Peanut Butter
1/4 C Hot fudge sauce
 
Directions:
Crust
1. Remove the filling from your Oreos and discard. Use a food processor or your hands to crus the Oreos cookies into a find crumb.
2. Melt butter in a microwave bowl and pour melted butter over Oreo crumbs. Stir until all crumbs are coated.
3. Press the crust into a round pan with a spoon.
 
Filling
1. Using a paddle attachment or an electric mixer, whip cream cheese on medium-high speed until light and fluffy for about 4 minutes. Add peanut butter spread and continue to mix until well combined.
2. Add the vanilla extract and heavy whipping cream and increase mixing speed. Whip for about 3 minutes.
3. Once all the ingredients have been combined, add Cool Whip and beat into batter. Stir to combine.
4. Chop your peanut butter cups into small pieces and combine with the batter.
5. Empty the batter into the pie crust and chill in the refrigerator for at least two hours and serve chilled.
 
Garnish
1. You can either just place peanut butter cups around the perimeter as I did or you can melt peanut butter and heat hot fudge to pour over the pie. The choice is yours. It depends how rich your wish your pie to be.
