Gluten and Lactose Free ROLO Cupcakes - Sweet Saturday!

Hi everyone and happy weekend! I hope your Saturday is going great so far. For this weeks Sweet Saturday post I am sharing a recipe I made up myself and tweaked a little here and there. These cupcakes were SO yummy and easy to make. They are gluten and lactose free so this is a recipe that can be altered to many different allergies or can be made completely normal as well. Enjoy!


 
Cupcakes Ingredients:
-Gluten Free Brownie mix and ingredients to make it
-Rolo candies
 
Cupcake Directions:
-Preheat oven as directed on your brownie box
-Grease Muffin Tin (This recipe makes 8 cupcakes)
-Fill muffin tin half way and place 1-2 Rolos in the center. Then fill the rest of the muffin tin with the second half of brownie mix.
-Bake as directed on your brownie box
-Remove and let cool before frosting
 
Caramel Frosting Ingredients:
-1/2 cup butter
-1 cup brown sugar
-1/4 cup milk (Lactaid/ Lactose Free/ Soy or Almond Milk)
-2 cups powdered sugar
-1 tsp. vanilla
 
Caramel Frosting Directions:
-Melt butter in saucepan, stir in brown sugar. Cook and stir over low heat 2 minutes.
-Add milk, continue stirring until boiling.
-Remove from heat and cool to lukewarm.
-Put into small mixer bowl, add sugar and vanilla while beating on medium speed, then beat on low speed for about one minute.
-Cut Rolo candies into small pieces and sprinkle on top after frosting the cupcakes.
