Marinara and Mozzarella Dip

Happy Hump DAYY! I am SUPER pumped because this coming Tuesday is the registration for the Walt Disney World Princess Half Marathon Weekend. I will be registering for the 10k on the Saturday and I am so excited. I have already started training. Psh...6.2 miles.. we got this! Better start polishing my running shoes... and tiara.
This recipe may not be the most best for a pre-run meal but it sure makes my taste buds race!! This takes all of about 10 minutes and is so tasty. This is so great because you just place down some bread slices and a bowl of this dip and let your guests go to town. LOVE IT!
Y'all may or may not know this but I love bread. Like I looooooovve bread. I mean it is high up there on my list of loves because I love it. If I could only have one food for the rest of my life it would be bread. You get the point right? After a couple of years of not being able to have it because of medical reasons, my love and appreciation for it only grew. I started taking a new medicine that allowed me to have gluten again and I have never looked back. #bringonthebread

Marinara & Mozzarella Cheese Dip
Yield: enough for about 4-6 people   Prep Time: 5 mins   Cook Time: 5 mins   Total Time: 10 mins
Ingredients:
1 (24oz) Jar of Marinara Sauce
2 cups of baby spinach, chopped
8oz ball of fresh mozzarella, cut into slices
1 French baguette, sliced
Olive oil and minced garlic

Directions:
Pre-heat oven to 450 F.
Lay the slices of baguette on a baking sheet and brush with olive oil.  Place in the oven for about 5 mins or until golden brown. This won’t take long. Once you have taken the bread out of the oven spread minced garlic over each slice. Set the slices aside.
In a medium pot add the marinara sauce and chopped baby spinach. Stir until the sauce is well heated and spinach is well incorporated.
Transfer this mixture to an over safe dish and add the mozzarella slices on top. Place in the oven for about 5-10 minutes or until the cheese has melted.
Serve immediately with your sliced bread and enjoy!
