Peanut Butter Cupcakes Recipe (Gluten and Dairy Free)

I baked these cupcakes the other day and my whole family reported that they were a hit! Could be my best recipe yet! These are super easy to make and don't require too much equipment, meaning not a huge clean up which is definitely important for me! I am allergic to gluten and I am lactose intolerant so I altered these cupcakes to my needs however you can make these completely normal as well.

Ingredients:
 
- 1/3 cup of butter
- 1/2 cup of peanut butter
- 1 1/4 cup of packed brown sugar
- 1 egg
- 1 teaspoon of vanilla extract
- 2 cups of all purpose flour (I used gluten free flour but you can use normal flour as well)
- 1/2 teaspoon of salt
- 1/2 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 1/4 teaspoon of ground cinnamon
- 3/4 cup of milk (I use Lactaid milk since I am lactose intolerant however if you have an allergy to milk all together you can use almond milk.)
- Buttercream Frosting (I used Publix frosting because I think it is delicious however if you would rather make your own buttercream frosting, be my guest)
- Reese's Buttercups (You can kind of eye ball how much you want depending on how many crumbles you want on top. You can use dark chocolate Reese's if you are lactose intolerant.)



Directions
- In a large bowl, cream the butter, peanut butter, and brown sugar until light and fluffy.
-Beat in egg and vanilla
- Combine the dry ingredients in a bowl
- Add the dry ingredients to the creamed mixture alternating with your milk
-Beat well after each addition
- Fill paper-lined muffin cups two thirds full. (As you can see I kind of overloaded the cups so several of my cupcakes ended up exploding and making a mess so stick to the directions!)
-Bake at 350 degrees for 18-22 minutes or until a toothpick inserted near the center comes out clean.
- Cool for 10 minutes before removing from pans and another 10 minutes after removed.


 
Frosting:
- While the cupcakes are cooling put your Reese's in a zip lock bag in the refrigerator 
- Once you have simply frosted your cupcakes take your hands and mash up the Reese's before sprinkling them on top 


 
VOILA!! You have a delicious peanut butter Reese's cupcake that is bound to put a smile on your face and on the faces of those eating it with you!
